Ingredients
6lbs chicken (about 15 drumsticks)
- For the marinade
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon paprika
1 teaspoon thyme
2 teaspoons garlic powder
1 teaspoon ginger powder
2 teaspoons onion powder
1 teaspoon curry powder
1 teaspoon cayenne or red chili powder
Instructions
- In a large container wash your chicken and drain completely. Mix all the spices for the marinade and rub into the chicken. Let the chicken marinate in the refrigerator for at least 30 minutes. A few hours to overnight is even better!
- Transfer the marinated chicken into a large sauce pan. Add in 2 cups of water. Steam the chicken on medium heat for 20 minutes. Add another cup of water after 10 minutes if you want to get more chicken broth to use later.
- While steaming the chicken, pre-heat the oven to 400F. After the oven is preheated or 20 minutes, whichever comes later, drain the chicken out of the sauce pan and grill in the oven for 15 minutes or until internal temperature reaches 165F.
- Save your chicken broth to use in any recipe such as the jollof rice. After grilling your chicken, serve as a side dish with any of your favorite mains!
Tips
- After steaming the chicken, you may add any additional sauces like bbq sauce before or after grilling in the oven!
- This marinade combination also works well for chicken on the grill directly! You can skip the steaming and oven step and grill to internal temperature on your grill or smoker.
- Any bone-in piece of chicken would do - drumsticks, wings or even bone-in chicken thigh.
