Ni Hao! This is my unique take on Chinese-style fried rice, where I use specific spices and ingredients to give it that oriental cuisine taste. Although I list some of the vegetables I use, this recipe also works with most any vegetables you can find in your pantry. Hope you enjoy this easy to make dish!

Ingredients

  • 3 cups of cooked rice
  • 1/4 cup olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 (2 inch) piece fresh ginger root, grated
  • 1/4 cup of peas
  • 1/4 cup of diced carrots
  • 1 large bell pepper, diced
  • 1 cup of shredded cabbage
  • 2 eggs scrambled
  • 1 cup protein of choice, minced (chicken, shrimp, beef, tofu)
  • 1/4 cup soy sauce
  • 1/4 tsp sesame oil
  • 1 tbsp chinese five spice
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup green onion to garnish
  • 1 tsp chili oil
  • 1 tbsp sesame seeds to garnish, optional

Instructions

  1. In a wok or large fry pan, heat the olive oil with the minced onion over medium-low heat until the onion is soft and translucent but not browned. Add the minced garlic, grated ginger and all the vegetables and stir fry on medium heat for a few minutes
  2. Next, add in the minced protein and stir fry with the vegetables until completely cooked
  3. Scramble the eggs in the wok or separately and add it in. Include the rice, mixing it in slowly and thoroughly.
  4. Finally pour in the soy sauce, sesame oil, chili oil and spices. Stir fry for a few minutes before garnishing with green onions and sesame seeds. Serve and enjoy!
  5. Tip: Substitute rice with quinoa or cous cous, if you desire.
