Hello there!
This started because friends kept asking how I'd made something and I kept replying with long messages.
Every dish here has been cooked in an ordinary kitchen, on an oven that runs hot along the back. If a recipe needs a gadget, I'll tell you what to use instead.

The third attempt is the honest one, and the one that gets written down.
1–5heat, always labelled
On every card and every page, with a note on how to bring it down.
50/50chili and butter
The pepper grinder and the oven get exactly equal time around here.
How a recipe earns its place here
Three cooks, minimum. Once the way I'd make it, once the way someone reading it for the first time would, and once with whatever is genuinely in the fridge on a Wednesday. If it falls apart on the third go, it doesn't go up.
