Ingredients

  • 4 cups all-purpose flour

  • 2 teaspoons salt

  • 2 teaspoons instant yeast

  • 2 cups warm water (115°F/46°C)

  • 4 tablespoons olive oil

  • 2 teaspoons rosemary leaves, optional

  • 1/4 teaspoon flaky sea salt, optional

Instructions

  1. In a very large bowl, mix together the flour, salt and instant yeast until combined. Then add the warm water. Using a spatula, mix all together until all the dry ingredients are absorbed into the water. The dough will be sticky.

  2. Rub the surface of the dough with olive oil. About 2 tablespoons of olive oil should do. You can do this by hand to ensure full coverage so that the dough does not dry out. Then cover the bowl with a damp cloth and place in a warm area to rise until doubled for about 1.5 hours.

  3. Line a 9 x 13 inch pan with parchment paper. If you don't have parchment paper, you can grease the pan thoroughly with butter, oil or non stick cooking spray.
  4. After the dough has risen, deflate the dough by gently pulling the dough from the sides of the bowl to the center. Pour a tablespoon of olive oil into the center of the prepared pan, transfer the deflated dough to the center of the pan and roll the dough in the oil to coat it all over.
  5. You can start preheating the oven to 425°F before you begin this step. Stretch the dough to reach the corners of the pan. Don't worry if it's not evenly stretched. Prepare the last tablespoon of olive oil in a small bowl. Dip your fingers in the oil and press straight down into the dough to make dimples all around. Spread any extra olive oil over the dough. You can also sprinkle the rosemary or coarse salt all over the dough if you plan to add those. Let the dough rise for a second time for about 30 minutes. No need to cover it this time.

  6. After the oven is preheated and the bread has risen a second time, bake in the middle layer of the oven for about 25 to 30 minutes until the underside of the bread is golden brown. Transfer to cooling rack. If you can resist, let the bread rest for 10 minutes before slicing and serving :D
