
Classic Meatloaf

Here is a great recipe that can be made with simple ingredients you probably already have in your fridge. Inspired by my friend, Krista, I add a spicy twist to this dish with some chili pepper. Meatloaf is a classic dish that will be enjoyed by all.

Ingredients
1 tablespoon oil
1 onion, chopped
3 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1 1/2 tablespoons Worcestershire sauce
1/3 cup broth
1 tablespoon ketchup
2 tablespoons BBQ sauce
2 lbs ground beef or turkey
3/4 cup dry breadcrumbs
2 eggs, beaten
Instructions
- Preheat oven to 375F. Heat oil in skillet over medium heat. Add chopped onions and cook until soft and translucent. Add minced garlic, salt, pepper, chili powder, stirring for about a minute. Then stir in Worcestershire sauce, broth and ketchup. Transfer mixture to a bowl and cool.
- Add the ground meat, breadcrumbs, and beaten eggs to the mixture in the bowl. Mix thoroughly. The mixture will be moist and sticky.
- Lightly coat a loaf pan with cooking spray. Form the mixture into a loaf and place in the loaf pan. Brush the meatloaf evenly with the BBQ sauce.
- Bake for 45 mins - 1 hour until thermometer inserted to the center reads at least 165F. Let the meatloaf stand 5 minutes. Slice and serve with sides like mashed potatoes and gravy. Enjoy!
