Here is a great recipe that can be made with simple ingredients you probably already have in your fridge. Inspired by my friend, Krista, I add a spicy twist to this dish with some chili pepper. Meatloaf is a classic dish that will be enjoyed by all.

Classic Meatloaf

Ingredients

  • 1 tablespoon oil

  • 1 onion, chopped

  • 3 garlic cloves, minced

  • 3/4 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chili powder

  • 1 1/2 tablespoons Worcestershire sauce

  • 1/3 cup broth

  • 1 tablespoon ketchup

  • 2 tablespoons BBQ sauce

  • 2 lbs ground beef or turkey

  • 3/4 cup dry breadcrumbs

  • 2 eggs, beaten

Instructions

  1. Preheat oven to 375F. Heat oil in skillet over medium heat. Add chopped onions and cook until soft and translucent. Add minced garlic, salt, pepper, chili powder, stirring for about a minute. Then stir in Worcestershire sauce, broth and ketchup. Transfer mixture to a bowl and cool.

  2. Add the ground meat, breadcrumbs, and beaten eggs to the mixture in the bowl. Mix thoroughly. The mixture will be moist and sticky.
  3. Lightly coat a loaf pan with cooking spray. Form the mixture into a loaf and place in the loaf pan. Brush the meatloaf evenly with the BBQ sauce.
  4. Bake for 45 mins - 1 hour until thermometer inserted to the center reads at least 165F. Let the meatloaf stand 5 minutes. Slice and serve with sides like mashed potatoes and gravy. Enjoy!
