
Plantain Crepes

Don't know what to do with those overripe and almost rotten plantains? Definitely do not throw them out. They are perfect for making these delicious plantain crepes! Overripe plantains are chopped and blended into a smooth batter, then cooked into thin, golden crepes with a naturally sweet and slightly caramelized flavor. Perfect for sweet or savory fillings, they make a unique and delicious breakfast, dessert, or snack.

Ingredients
2 medium overripe plantains (~2 cups blended)
5 eggs
1 cup flour
1 cup milk, dairy or non-dairy
1/4 cup coconut sugar
1/4 cup oil or melted butter
1 teaspoon vanilla extract
1/2 teaspoon nutmeg

Instructions
- Peel and cut plantains into small pieces. Add to a large blender and blend on high until smooth. Add the rest of the ingredients to the blender and blend on high until smooth. Scrape the sides if necessary to get all the mixture in.
- Rest the batter in the refrigerator for 30 minutes at least.
- Heat up a skillet on medium heat and add a very light coat of cooking spray. Scoop approximately 1/2 cup of batter into the pan, tilting it to allow the batter to spread or use a the base of a large spoon to get the batter nice, thin and flat. Cook on medium heat for about a minute then flip the crepe. Let is cook on the other side for another minute. Repeat with remaining batter.
- Serve with honey, syrup, fruit, whipped cream, you name it!
