These pancakes are so tasty you'd hardly believe how much nutrition is packed in it! It's very easy to make and perfect for satisfying your breakfast comfort food cravings. Serve with your favorite breakfast sides like eggs and bacon and top with syrup, fruit or whipped cream. Enjoy!

Ingredients

  • 2 1/4 cups rolled oats

  • 2 eggs
  • 1 cup milk (dairy or non-dairy)
  • 2 overripe bananas
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon baking powder

  • 3 tablespoons flax seed meal, optional

  • 4 pitted dates, optional

Instructions

  1. Add all ingredients to a blender and blend on high speed until smooth
  2. Heat up a skillet or pan on medium heat. With a little bit of olive oil or cooking spray scoop approximately a quarter cup of batter onto the pan
  3. Cook until the edges are brown, then flip the pancake and cook until browned on the other side. Repeat with remaining batter
  4. Serve with honey, syrup and/or fruit, as desired. Enjoy!
