Oatmeal Banana Pancakes

These pancakes are so tasty you'd hardly believe how much nutrition is packed in it!

Ingredients
- 2 1/2 cups rolled oats
- 2 eggs
- 1 cup milk (dairy or non-dairy)
- 2 overripe bananas
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp baking powder
- 3 tbsp flax seed meal, optional
- 4 pitted dates, optional
Instructions
- Add all ingredients to a blender and blend on high speed until smooth
- Heat up a skillet or pan on medium heat. With a little bit of olive oil or cooking spray scoop approximately a quarter cup of batter onto the pan
- Cook until the edges are brown, then flip the pancake and cook until browned on the other side. Repeat with remaining batter
- Serve with honey, syrup and/or fruit, as desired. Enjoy!
