Ingredients

  • 2 eggs

  • 1 cup milk

  • 1 cup flour

  • 1 cup corn meal

  • 1/4 cup oil or melted butter

  • 3 teaspoons baking powder

  • 1/3 cup coconut or brown sugar

  • 1/2 teaspoon salt

  • 1/2 cup sweet kernel corn, optional

Instructions

  1. Preheat oven to 400F. In a medium bowl, whisk the wet ingredients together: eggs, milk, oil or butter, and sugar.
  2. In another bowl, mix the dry ingredients: flour, corn meal, baking powder, and salt. Then gently combine with the wet ingredients mixture. If including the sweet kernel corn, which I highly recommend, add those in last. Don't over mix the batter and let it rest for 5 minutes before baking.
  3. In a greased 9 inch square or round pan, bake the batter for 18 - 20 minutes. You can check that it's done if a tooth pick comes out clean when inserted.

Tips
