Ingredients
2 eggs
1 cup milk
1 cup flour
1 cup corn meal
1/4 cup oil or melted butter
3 teaspoons baking powder
1/3 cup coconut or brown sugar
1/2 teaspoon salt
1/2 cup sweet kernel corn, optional
Instructions
- Preheat oven to 400F. In a medium bowl, whisk the wet ingredients together: eggs, milk, oil or butter, and sugar.
- In another bowl, mix the dry ingredients: flour, corn meal, baking powder, and salt. Then gently combine with the wet ingredients mixture. If including the sweet kernel corn, which I highly recommend, add those in last. Don't over mix the batter and let it rest for 5 minutes before baking.
- In a greased 9 inch square or round pan, bake the batter for 18 - 20 minutes. You can check that it's done if a tooth pick comes out clean when inserted.
- Serve warm with butter or as a side dish with chili or bbq chicken. Yummm

- You can bake the batter in muffin tins, yielding about 10 - 12 muffins. Bake for only 10 - 12 mins at 400F
