Ingredients
- 2 cups rolled oats
- 1 cup puffed brown rice
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1/4 cup flax seed meal
- 1/2 cup sliced almonds
1/4 cup date syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoon honey, optional
- 1/4 cup raisins, optional
Instructions
- Preheat oven to 315F
- Mix all the ingredients into a large bowl, except the optional additional honey included here for the very sweet tooth :D
- Line a flat baking tray with parchment paper and spread mixture over it evenly. Bake in oven for 12 minutes
- Remove promptly from oven and allow to cool for at least 10 minutes. The cooling will allow the granola to dry out and get crispy.
- After cooling, break the granola into large chunks. Enjoy as is or serve with some yogurt, chocolate chips and berries!
