The delicate almond cake is a sure way to satisfy your cake craving. With a hint of orange zest to brighten up the flavor, each bite will melt in your mouth and fill you with delight. I love to prepare this when we have guests over, but sometimes I'll even make it for myself to snack on during the week. This recipe is a completely gluten free treat. Ingredients

  • 4 eggs, yolks and whites separated
  • 3 cups of almond flour
  • 1/2 cup of sugar
  • 1 large orange, zested and juiced
  • 1/2 cup olive oil
  • 1/2 tablespoon baking powder
  • 1/4 cup sliced almonds
  • 1 tbsp powdered sugar, optional

Instructions

  1. Preheat your oven to 350F (175C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt until well combined. Set aside.
  3. In a large bowl, beat the egg yolks and the sugar until pale yellow using an electric mixer. Add the olive oil, orange juice and orange zest then whisk thoroughly for another minute.
  4. Mix in the almond flour and baking powder into the large bowl and set aside
  5. In a separate bowl, beat the egg whites with an electric mixer until stiff peaks. Gently fold this into the rest of the cake batter
  6. Pour the cake batter into the prepared cake pan. Evenly spread the almond slices on top and bake for 30-35 minutes. Check with a toothpick for doneness at the center of the pan. Bake for additional 5 minutes, if needed.
  7. Remove the cake from the oven and let it cool in the pan Then, carefully transfer the cake to cake stand and sprinkle on the powdered sugar for serving
